this weekend the bookstore in gabs started their winter sale and i purchased a new cookbook. harvest by christine stevens. the fact that it’s called “harvest” was enough to validate a purchase, but bonus: artsy earth tone photographs and recipes from an organic farm in south africa. can i please live on a farm in the mountains and grow all my own fruits, veggies, and herbs? tonight i made lemon chicken with pasta and roast tomato sauce and the stevens’ family brownie recipe. YUM! the roast tomato sauce was so simple and so great, so i’m giving yall the recipe. try it out!

roast tomato sauce

2 kg tomatos/4 garlic cloves, crushed/3 tbsp thyme leaves/2 tsp sea salt/50 ml olive oil

halve or quarter the tomatoes and spread them in a baking dish. sprinkle with all the other ingredients and roast in a pre-heated oven at 200 degrees C/395 degrees F for 20-30 minutes. cool before whizzing in a blender. freeze in individual portions.
